6 Hour Sourdough

If you want homemade sourdough without waiting overnight, this 6 hour sourdough recipe is one of the easiest ways to make a naturally leavened loaf in a single day.

Ingredients:

233g sourdough starter

291g water

466g bread flour

12g salt

Method:

Mix the Dough

Add the sourdough starter, water, bread flour, and salt into a mixer. Mix until smooth and the dough reaches about 78°F.

Bench Rest

Let the dough rest for 10 minutes on the countertop.

Round the dough into a smooth ball and place into a bowl. Cover and allow it to rest for 2 hours at room temperature.

Stretch and Fold

Perform stretch and folds to strengthen the dough.

Cover again and let it rest another 2 hours at room temperature.

Shaping

Lightly dust the dough with flour and shape it into a tight loaf.

Place the shaped dough seam-side up into a floured proofing basket.

Final Proof

Let the dough proof in the basket covered for 2 hours at room temperature.

Baking

Preheat your oven to 450°F.

Score the loaf and bake for about 35 minutes until golden brown with a crisp crust.

Allow the bread to cool before slicing.
