Banana Bread Snackin'
This recipe makes 1 large loaf using a 9 inch bread tin.
Ingredients:
3 bananas
2 eggs
1/2 cup olive oil
1/2 cup maple syrup
1 tablespoon honey
1 1/2 teaspoons vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground cardamom
1/4 teaspoon ground pumpkin spice
1/2 teaspoon salt
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup chocolate chips (optional)
Method
Preheat oven to 325 degrees Fahrenheit.
Smash the bananas in a large mixing bowl. Then whisk in eggs.
Add the rest of the wet ingredients to the bowl and whisk.
To the same bowl, add the rest of the dry ingredients and whisk until smooth. After, fold in the chocolate chips.
Add the mixture to an oiled bread tin and bake for 45 minutes at 325 degrees Fahrenheit. Then, lower the heat to 300 degrees Fahrenheit and bake for 30 minutes.
A half an hour after the loaf is done baking, either wrap the whole loaf in plastic or cut into slices and wrap individually to keep moist.
