Banana Bread Snackin'

This recipe makes 1 large loaf using a 9 inch bread tin.


Ingredients:

3 bananas

2 eggs

1/2 cup olive oil

1/2 cup maple syrup

1 tablespoon honey

1 1/2 teaspoons vanilla extract

1/4 teaspoon ground cinnamon

1/4 teaspoon ground ginger

1/4 teaspoon ground cardamom

1/4 teaspoon ground pumpkin spice

1/2 teaspoon salt

2 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup chocolate chips (optional)


Method

  • Preheat oven to 325 degrees Fahrenheit.

  • Smash the bananas in a large mixing bowl. Then whisk in eggs.

  • Add the rest of the wet ingredients to the bowl and whisk.

  • To the same bowl, add the rest of the dry ingredients and whisk until smooth. After, fold in the chocolate chips.

  • Add the mixture to an oiled bread tin and bake for 45 minutes at 325 degrees Fahrenheit. Then, lower the heat to 300 degrees Fahrenheit and bake for 30 minutes.

  • A half an hour after the loaf is done baking, either wrap the whole loaf in plastic or cut into slices and wrap individually to keep moist.
