Mediterranean Caesar Sauce
This recipe makes about 1/4 cup of sauce.
Ingredients:
3 Anchovy fillets
1 Tablespoon capers
1 Small clove garlic
1/4 Teaspoon dried oregano
1/2 Teaspoon red or white wine vinegar
1 Tablespoon extra virgin olive oil
2 Tablespoons mayonnaise
Fresh cracked black pepper to taste
Method:
Finely grate one small clove of garlic into a mortar pestle.
Add anchovies, capers, dried oregano, and fresh cracked black pepper to the mortar pestle.
Start smashing ingredients together until them become a paste.
Remove the pestle.
Now add extra virgin olive oil, vinegar, and mayonnaise to the mortar.
Mix ingredients with a spoon until emulsified.
Enjoy this sauce with bread, on sandwiches, in salads, etc.
