Summer Stewed Peppers
This recipe serves about 3-4 people
Wash bell peppers and cut each into fillets. It is much easier to stand the pepper with the stem facing down. This way you can leave the seeds intact with the stem.
Now cut each fillet into long chunks.
Wash and cut in half all of the cherry tomatoes. Add the tomatoes into a large pot along with the olive oil and salt.
Lastly, add the cut peppers on top. Cover the pot with a lid and cook over medium heat for 45 minutes stirring occasionally.
Enjoy with bead, over rice, or alongside any meat or fish.
